What paperwork when tenant gives notice to end a tenancy

One of my tenants has given notice that they would like to leave in 7 weeks - they have been on a periodic tenancy for 5 months. Is there any official paperwork they need to complete so this date is cemented, or is their email sufficient?

I'm just thinking of the situation where I find a new tenant, but my existing tenant's plans then change and they decide to extend by a few more weeks, and they keep extending by a few weeks at a time.

Should I issue them with a S21 (2 months notice) now, so at least there is a definite date 2 months from now by when they must have vacated?
