Statutory periodic tenancy to fixed term tenancy

Hi there, my tenant's fixed term tenancy ended on 6 August, I contacted him before and he only got back to me yesterday saying that he'd like to sign another 12 months. Since the previous fixed term has already ended, I presume his tenancy is currently on statutory periodic tenancy. So my questions are: 1. Can the new fixed term start from 7 August retrospectively? 2. What formalities and documents are required to set up a new tenancy in this instance? Many thanks. Catie
