Tenant cant committ to new contract

A tenant has been referenced, paid the bond, signed the contract and expected move in date in 15 days time. The property has been taken off the market and reserved for her.

She is now saying that because she has glanular fever she may not be able to collect the keys on the agreed date and cannot give an exact date as to when it will be. Whats our position?.
