Signing new tenant

Hello,

we are hoping to get possession of the property on 11th, we have new tenants wants to sign for 11th , we are going on holiday on 11th for fortnight, i have a builder friend whom i can trust but he is not registered for redress scheme,

(1)Can i prepare contract for 11th, sign in advance and once we get possession , my friend ask the tenant to sign his part and issue the contract, does this sound legal ?
(2) Can i print blank contract, sign it (builder is really trust worthy ), and he put tenants detail by hand if 11th don't go as plan?

Any suggestions please
