Just wondering how long should we keep tenants details and information regarding their tenancy after they move out.

Thinking under GDPR then we should not keep for very long after deposit has been sorted, other than what we need to keep for tax reason reasons we would not have need for this information. But there again how long after they move out could they decide to legally challenge something ie not providing the deposit information, not doing repairs that they asked for.
