'Proper' service of a section 21 notice

What constitutes correct service of a section 21 notice in the eyes of a Court? I intend to serve one on my tenant after 1st. October and need to be sure that it is served properly in case we finish up in Court. Does it need to be signed for by the tenant, or sent by recorded delivery, or email, or 1st class mail or put through the letter box?
