Section 21 served, but tenant refuses to leave on agreed date

Hi, our tenant was served Section 21 in November 2020 and is due to leave next Monday. He was notified of this, he agreed to it, and we have a new tenant moving in around 10 days after.
Today he emailed the agent to say that, as his new tenancy only starts mid July, he will remain at our property until then.
I see that we could go through court to have him evicted, but how long could this take, and how much would it cost? What would happen with the new tenant if the property is not available to them at the agreed date?
