Overseas applicants

Good evening everyone, a quick question regarding overseas applicants (from Hong Kong). Both work for well known companies with offices in London but resigning from their current employers with a view to relocate to London and apply to their London offices for a job. Their daughter will be studying in London (the reason for the move) and they are happy to pay for 12 months upfront. I wonder if anyone had similar applicants and how to run references on them, obviously I asked for bank statements, current employers' letters, university letter, anything else?

Thanks in advance for any advice.

PS: they have a little dog, which they will bring too. I never had tenants with pets but recent enquiries are all from people with pets.
