Rent increase during a periodic tenancy

A couple are nearing the end of their 6 month contract - we use the RLA standard AST. They have said they would like to go on a periodic. In order to give the landlord more of a guarantee over future income, we propose to offer the tenants a choice:

a) a further 6 month contract at the same rent;

b) a periodic contract with a rent increase of £25 after 3 months (we have already increased the rent by that amount in another flat on the same site, so it seems a fair amount)

If we go down option b) is it simply enough to get the tenants to sign that they are content with this in an exchange of letters?
