AST or Statutory Roll Over?

The AST expires on one of our properties in August can we just alter the old AST and both us and tenant sign, also do we need to issue another Secion 21 as the old one expires in August?
Also is it a bad idea to suggest a the tenancy rolls on on a Statutory Periodic Basis? Do we put ourselves at risk on this basis. We realise we still have to give the tenant two months notice and they only have to give us a month.
