How does a statutory periodic tenancy work?

I have recently taken over management of our rented property from an agent that we were using previously. The assured shorthold tenancy ends next month and, from what I've read, it seems that a statutory periodic tenancy can be used to continue the agreement? Do I need additional paperwork for this as can't seem to find an example contract anywhere or can I just let the tenants know how it works in writing?
