Tenant moving out and wants to pay rent arrears privately

Hello,
We have a tenant who is due to move out on the 16th August. He was sharing the flat with one other person who has run off, owing 3 months rent - I have sent you a separate enquiry about her.

He has also built up rent arrears of circa �£3500.

He has offered to create a payment plan, privately with us, in order to avoid any black marks on his credit history.

We would like to do this and are wondering if you can advise on the best way to approach it with him? He won't be living in the flat any more and we won't have an agent to be an intermediary.
