best way to claim rent owed

We have started the section 21 process and lodged this at Court. The tenants have been served and have until 11 November to offer a defence.

My question is now, what is the best way to claim money, at the moment they owe about £3,000, going up by £400 per month.
With the current situation, they will clearly not be going until well into 2021, so will owe a lot more by then.
As I know their address at the moment, do I claim now?
Can I then make another claim in 2021 for the extra?
When I get an order, can the High Court Sheriffs deal with them both at the same time?
