New tenant replacing one of two existing tenants

I have 2 tenants who signed 2 year tenancy agreement a year ago. One of the tenants has given me notice and the remaining tenant has found someone to take it on for the second year.

could anyone advise on how to proceed in this instance? Should I issue a new contract! Can I amend the old one by simply striking through the name of the old tenant and asking the new one to sign the agreement? How do I deal with the deposit which is lodged with the DPS?

any advice gratefully received.
